Food Safety and Sanitation

Preparation of research-based training materials and guidebooks for safe food handling in retail food establishments such as restaurants, supermarkets and institutional feeding operations. Among other items, these materials summarize best practices for preventing foodborne illness by preventing contamination and reducing the risk factors that are known to contribute to foodborne disease outbreaks and outline approaches to training that have been shown to be effective.
